Situated “in a magical glen of seclusion” inside a Falls Church office park, this “gorgeous” restaurant turns out “delicious” French-accented New American food in a “majestic” space where the “soaring windows” offer “wonderful views” of the garden, koi ponds and “soothing waterfalls”; chef Bertrand Chemel (ex NYC’s Café Boulud) has brought an “exciting new approach” to the kitchen, and although you can expect a “hefty price tag”, “professional service” helps to make it “perfect for a special occasion” or business lunch; N.B. bar dining is a relative bargain.

Ingredients
5.25 ounces of corn kernels
0.5 ounces of vegetable oil
13 ounces of sugar
3 ounces of water
1 pinch of cream of tartar
3.5 ounces of salted butter, soft
1 vanilla bean
Method - Popcorn:
- Combine corn and oil in a large pot.
- Cover with aluminum foil.
- Place over medium heat and shake vigorously.
- The kernels will begin to pop after two minutes.
- Turn down the heat to medium-low and continue to shake, until the popping subsides.
- Remove from the heat and separate all kernels that did not pop and discard.
- Set aside.
Method - Caramel:
- Combine the water, sugar and cream of tartar in a medium pot.
- Place over low heat.
- Once sugar has melted turn the heat to high.
- Once the sugar has cooked to a medium caramel color remove from the heat and add the butter and vanilla.
- Stir until well combined.
- Immediately pour over the popcorn and stir. *Be careful because the sugar will be extremely hot.
- Once all the popcorn has been coated evenly with the caramel, spread onto a sheet pan to cool.
- Serve in bowl.

The fine dining restaurant serves modern takes on American French fare, and Chavez’s offerings include a Bailey’s ganache mousse, a pumpkin crémeux served with a root beer float, and a duo of egg-based desserts that pairs a crème brûlée with lemon floating islands.
