The dish was described on 2941’s prix-fixe lunch menu in the barest of terms: East Coast halibut, heirloom tomato, tomato gazpacho, basil salad. The early (out of?) season tomatoes did give me pause, but I ordered the entrée anyway. What chef Bertrand Chemel plated was something I never could have imagined... (click to read the entire story)

Ingredients:
- 2 oz of fresh Goat cheese mixed with 4 oz of LA TUR cheese
(LA TUR cheese is from Italy and it is available at places like Whole Food or Balducci’s)
- 1 lb large red beets
- 2 Tablespoons grape seed oil
- 1 Tablespoon kosher salt (for cooking)
- Kosher salt (for the tray)
- 1 cup dry cherries
- 2 bags of Earl Grey Tea
- 1 diced shallot
- ¼ lb frisée lettuce
- ¼ cup sweet cherries cut in half and pitted
- 2 teaspoons Sicilian pistachios
Vinaigrette – makes one cup:
- ¾ cup grape seed oil
- 4 Tablespoons mustard
- 1 Tablespoon & 1 teaspoon water
- 2 Tablespoon red wine vinegar
- The vinaigrette is made by combining the four ingredients together and mixing
Method:
- Wash and dry the beets
- Place the beets in a center of an aluminum foil sheet, add the grape seed oil and kosher salt on top of the beets and close the foil
- Place the aluminum foil on a tray covered with kosher salt (the salt on the tray will prevent the beets from burning)
- Cook the beets in a oven preheated to 350 degrees for 2 to 3 hours (depending on the size), until tender
- Peel the beets and let them cool
- Bring two cups of water and the dry cherries to a boil, discard the liquid and reserve the cherries
- Infuse two bags of Earl Grey Tea in two cups of hot water, add all cherries into the hot tea, set aside until cool
- Chop the beets into a very small dice, add the shallots, two tablespoons of the vinaigrette and salt and pepper to taste
- Strain and dry the cherries and add to the beet tartar
- Press the beet tartar into a ring mold and remove
- Top with a teaspoon of cheese, the pistachios and the lettuce.
