Ingredients:
- 6 to 8 ounces red snapper, skinned
- Rum mojito marinade:
- 3 stems Thai basil
- 3 stems mint
- ½ shallot
- ¼ Thai chili
- ½ cup rum (preference 8 years old)
- ¼ fresh vanilla bean
- ¼ fresh pineapple peeled
- ½ cup rice vinegar
- 1 lime cut into small pieces
Garnish:
2 tablespoons watermelon, diced
2 radishes, shaved very fine
2 tablespoons mango, diced
12 very small leaves of mint
1-teaspoon Thai basil buds
- In a pesto mortar, crush the mint, Thai basil, chili, shallot, lime, vanilla bean, and pineapple for about 3 minutes.
- Add vinegar and rum to the mix. Place marinade in the refrigerator for 30 minutes to one-hour minimum.
- Strain the liquid through a sieve or cheesecloth, discard the pulp and herbs
- Cut the fish into ¼-inch pieces. Season with salt then add the marinade over fish. Let fish soak in marinade for at least 5 minutes.
- Place fish in a bowl or deep plate mixed with radishes, mango, watermelon, mint, and basil. Pour a small amount of the rum mojito marinade to finish.
- Serve Céviche fresh.

Tarara Winery will launch their 20th anniversary year on May 30, 2009 with their inaugural Fine Vine Festival: Just Say Viognier, a collaborative event designed to spotlight Virginia Viognier wines and Metro DC’s finest restaurants.
Guests will experience an exquisite five-course meal from the region’s most exclusive restaurants – 2941, Della’s, Equinox, The Restaurant at Patowmack Farms and Vintage 50. Each course will be designed specifically to compliment the selection of Virginia Viogniers from Casanel Vineyards, Cooper Vineyards, Keswick Vineyards, Tarara Winery and Veritas Vineyard & Winery. In addition to epicurean delights and live music, attendees will enjoy the tented outdoor fête on the grounds of Tarara Winery nestled in the bluffs of the Potomac River.
