Celebrate Inauguration Day All January Long

From January 1st through January 31st, 2941 Restaurant is offering a three-course bar tasting menu priced at $44 per person, in honor of President-elect Barack Obama, who will be sworn in as the 44th President of the United States on January 20, 2009.

Executive Chef Bertrand Chemel’s bar tasting menu will be available seven nights a week in the bar and lounge of the restaurant. While he plans to change the menu frequently, you can expect dishes such as the Chilean Turbot, with green lentils, lettuce emulsion and celery, and the Roasted Squab Breast with rice, poached egg, frisée and salmis jus. Pastry Chef Anthony Chavez will debut some equally elegant desserts on this bar menu, such as a Coffee Moelleux, with crème anglais and vanilla chip ice cream.

Sommelier Stefano Cappelli is getting into the inaugural spirit as well, offering eight bottles of wine priced at $44 each during the month of January. With four reds and four whites from which to choose, guests can enjoy affordably priced selections, such as an unoaked 2006 Pellegrini Family Russian River Valley Chardonnay, or a 2000 Chateau La Cardonne Cru Bourgeois.

Recipe of the Month

Butternut Squash Soup with
Cinnamon Marshmallows
A perfect for a holiday dinner party


Serves 12-15

Soup:

  • 4 oz butter (clarified)
  • 7 oz onion (sliced)
  • 1 oz ginger
  • 7 butternut squash (cleaned and cut into large dice)
  • 4.5 oz lemon grass (chopped)
  • 1 can of coconut milk
  • 1 cup heavy cream
  • 1 T curry powder
  • ½ oz butter
  • 2 ½ qt water

1. In a large sauce pot, melt 4 oz of butter, and sweat the onions and ginger for about five minutes.
2. Add the butternut squash and sweat for about fifteen to twenty minutes.
3. Add the water and heavy cream.
4. In a small sauce pot, melt the clarified butter.
5. Add the lemon grass and stir-fry for about 4 minutes, then add the curry powder and coconut milk.  Cook for 5 minutes and process in a blender until everything is chopped very well. Pass through a sieve and keep the liquid.

Marshmallow:

  • 2 cups sugar
  • ¾ cup water
  • ½ cup + 1T water
  • 3 T gelatin powder
  • 1T glucose
  • (2 each) egg white
  • ½ t Cinnamon powder

1. Soak the gelatin in ½ cup + 1T of water.
2. Mix the ¾-cup water, sugar, corn syrup together and bring to 125 Celsius (or 257F).
3. Whip the egg white and add the warm syrup.
4. Melt the gelatin and add to the egg white.
5. Whip until slightly warm and pour into a mold or a dip platter.
6. Allow to set.
7. Cut into ½-inch dice.
