It tasted as if Bertrand Chemel was playing it safe in his first few months at this glamorous lakeside restaurant in Falls Church. No more. These days, the 33-year-old import from New York is turning out food that puts him in the upper echelons of Washington's culinary elite. The French native's ideas read simple on paper but translate into great taste on the plate. Order the seafood salad, and out comes a delicate arrangement of perfect shrimp and squid set atop a base of black beans, framed in droplets of green oil and small, sweet scallops capped with slivers of tingling jalapeno. Ask for saddle of lamb, and what follows are rounds of some of the most exquisite roasted meat your lips have ever met, dappled with leek sauce and poised atop a lush but light herbed risotto. Almost every dish comes with a subtle surprise: Bacon vinaigrette adds a lush smokiness to grilled swordfish, for instance. Great restaurants are team efforts, and the crew here is tops, which means a diner can also expect superb wine advice and eat as well at the end as at the start of a meal. (That's a hint to indulge in the exquisite handiwork of pastry chef Anthony Chavez.) 2941, hung with giant mirrors tilted to take in the outdoor scenery and inviting with fabrics in tangerine and eggplant, has always been beautiful. Under Chemel and company, the restaurant has become one of the area's most thrilling places to pick up a fork.

Recipe of the Month

Spiced Pumpkin Cake
Apple Caramel Mousse

Ingredients:
157 g. Eggs
90 g. Sugar
90 g. Light brown sugar
70 g. Cake flour
2 g. Baking soda
1.25 g. Cinnamon
.5 g. Nutmeg
170 g. Pumpkin puree
50 g. Butter, melted and warm

Method:
1. Pre-heat oven to 400 F
2. Combine the eggs and sugars in a mixing bowl, whip on high until ribbon.
3. Fold in the pumpkin puree.
4. Fold in the dry ingredients.
5. Take 10 percent of the cake mix and whisk in the butter. 
6. Fold the butter /cake mixture into the remaining cake batter.
7. Spread into a 15x11-sheet pan lined with parchment.  Bake 8 minutes.

Apple Caramel Mousse
Ingredients:
200 g. apples (1/4 inch dice)
75 g. Sugar
20 g. Butter
¼ vanilla bean
Pinch salt

- In a hot pan, caramelize the sugar until a light amber color.
- Add the butter, vanilla bean, and salt.  Stir to combine.
- Add the apples and cook over high heat until tender and the liquid from the apples has reduced to a syrup. 
- Cool and reserve at room temperature.

250 g. Heavy Cream
4 Ceylon Cinnamon Sticks
60 g. Corn syrup
170 g. Sugar
110 g. egg yolks
35 g. water
45 g. sugar
16 g. gelatin powder
450 g. Whipped cream

- Warm the heavy cream in the microwave with the cinnamon stick.  Infuse for 20 minutes.
- Soak the gelatin in 5x its weight of ice water.
- Place the corn syrup in a pot.  Bring to a boil and add the sugar.  Stir slowly until caramelized.  Stop the caramel with the warm heavy cream.
- Remove from the heat; strain the caramel into a bowl.  Add the gelatin and combine thoroughly.
Cool to approximately 40 degrees C.
- Combine the water, sugar, and egg yolks in a mixing bowl.  Place over a double broiler and whisk until it reaches 85 degrees C. Place onto a mixer and whip until cool.
- Fold the egg yolk mixture into the caramel mixture.  Fold ½ of the whipped cream into the mousse.  Mix halfway then add the remaining whipped cream.

Assembly:
Line your table with plastic wrap.
Place the pumpkin biscuit on top of the plastic wrap
Spread ¼ inch layer of the caramel mousse. 
Add the apples to the mousse.  Press the apples into the mousse using a spoon.

Begin to roll the cake using the plastic wrap as help.  Once the cake is rolled, twist the ends of the plastic to tighten the cake.  Refrigerate until firm.  Remove from the plastic decorate and serve.
