2941 Commemorates Halloween with
"Eye Scream" Dessert and "Evil Eye" Cocktail

2941 Restaurant is commemorating Halloween throughout October with a special “Eye Scream” dessert, designed by pastry chef Anthony Chavez. Valrhona white chocolate, pistachio mousse and raspberry-lychee coulis create the frighteningly delicious dish, priced at $15 and presented on a bed of dry ice to resemble a pair of smoking eyeballs.Sunday Weddings at 2941


The specialty cocktail of the month, the “Evil Eye,” made with muddled blueberries, pomegranate syrup, cranberry juice, soda water and Ketel One vodka, is not available at the bar. The drink, priced at $10 and served in a Collins glass, is garnished with a spiked blueberry-stuffed lychee and a dash of grenadine for a Halloween-festive effect.

Executive Chef Bertrand Chemel is also embracing the Halloween spirit with a special tasting menu, available Friday, October 31st and Saturday, November 1st. Priced at $100 per person, the four-course prix-fixe menu will include the “Evil Eye” cocktail and “Eye Scream” dessert, as well as three additional savory specials created just for the occasion.

Recipe of the Month

Crispy Lobster
In lobster reduction sauce

Serves 4

Sauce
4 – 1 ¼ lb lobsters
2 oz carrots, medium dice
1 oz white onion, medium dice
14 oz red wine
1 tsp black peppercorns, whole
1 piece star anise
2 green cardamom pods
½ tsp fennel seed
2 tbsp olive oil
2 sprigs thyme
1 stem basil
1 bay leaf
18 oz brown veal or beef stock

Celery root puree
14 oz celery root, peeled and cut into large dice
2 ½ C half & half

Lobster prep
4 slices white bread, cut ¼ inch thick into 2-inch rounds
1 tbsp flour
1 tbsp olive oil
1 tbsp butter
1 egg, whisked

Method for sauce

  1. Reduce red wine by 3/4 of its original volume and reserve.
  2. Remove claws and tails from lobster and reserve for later.
  3. Using only two lobster bodies, remove innards and lungs. Cut each into 3 pieces. Reserve.
  4. Heat a medium sized saucepan over medium heat with olive oil and add lobster bodies.
  5. Lightly sauté the lobster for 5 minutes. Once red add the carrots, onions, herbs and spices and cook for another 5 minutes.
  6. Add wine and stock to sauce pan and simmer for 20 minutes.
  7. Pulse sauce in a blender until chunky.
  8. Pass through a fine sieve into a clean sauce pan.
  9. Reduce sauce by 75% and season with salt and pepper.

Method for celery root

  1. In a small saucepan over medium heat add the celery root and half-and-half and simmer until celery root is tender.
  2. Remove celery root into a blender and reserve the liquid.
  3. Puree celery root with just enough reserved liquid until smooth and creamy.
  4. Season with salt and pepper.

Method for lobster

  1. Bring a large pot of water to boil.
  2. Add the claws and tails to water.
  3. Cook tails 2 minutes, small claws 4 minutes and large claws 5 minutes.
  4. Cool down immediately in ice water.
  5. Remove claws and tails from shell.
  6. Claws should be cooked through and tails medium rare. Cut tails in half along the spine. Reserve.
  7. Put a toothpick through each tail. Starting from the tail end pierce the tail and run the pick through the head end and create a circle. Reserve claws and tails.
  8. Mix egg and flour, brush the cut side of the tail and press lightly onto one piece of bread. Apply to the remaining tails and reserve. This can be done an hour ahead of time.

Presentation

  • Warm celery root puree and sauce. Reserve.
  • Heat a large sauté pan with olive oil over medium heat.
  • Season lobster tail with salt and pepper.
  • Add lobster tail bread side down and cook until nicely golden brown.
  • Add a little butter and flip over the tails, add the claws, and remove from heat. Let tails and claws continue to cook for about two minutes.
  • Remove from pan.
  • Place a little celery root puree on a serving dish with a tail and claw on top of the puree bread side up. Garnish with about a tablespoon of sauce or as desired.
