Chef Chemel is pleased to introduce:
Executive Pastry Chef Anthony Chavez

A California native, Chef Chavez has spent the past ten years perfecting his skills in pastry art at several prominent dessert destinations including Dean and Deluca,The Ritz-Carlton Hotel Chicago, and most recently at Sofitel Chicago Water Tower, where he served as Executive Pastry Chef.

In addition to many years of classical pastry training at some of the finest cooking institutes in the United States, Chef Chavez also has extensive training in sugar art, baking, cakes, and tarts. He has recently been featured in numerous publications including Pastry’s Best Magazine, Chicago Magazine, CS Magazine, and Time Out Chicago.

Chef Chavez has been busy creating an entirely new dessert menu for 2941. He looks forward to meeting you and welcomes feedback on his new mouth watering creations.


Recipe of the Month

Almond Pain de Gênes with Westmoreland County Strawberries
Yields eight plated desserts

Almond Pain de Gênes Ingredients / Cooking Instructions:

  • 25 g.   (.9 oz)   Cornstarch
  • 100 g. (3.5 oz) Confectioners Sugar
  • 100 g. (3.5 oz) Softened Butter
  • 100 g. (3.5 oz) Almond Flour
  • 1 Egg Yolk
  • 1 Egg
  • 50 g. (1.7 oz) Heavy Cream                                              
  • 8 Fresh Local Strawberries
  • Sliced Almonds, skin-on (as needed)                           
  1. Preheat oven to 160°C. (320°F.)
  2. Combine the cornstarch and sugar in a mixing bowl.
  3. Add the butter and almond flour, cream with a paddle.
  4. Slowly emulsify the egg yolk and egg into the butter mixture.
  5. Add the cream mix until combined.
  6. Place into a piping bag fitted with a #4 plain tip.
  7. Pipe into 3”X 3/4” nonstick pan, lined with parchment
  8. Place strawberries on top of the batter. Sprinkle with the sliced almonds.
  9. Bake for 10 to 15 minutes or until golden brown.  Reserve at room temperature

Additional Ingredients / Final Assembly:

  • 2 pints Fresh Local Strawberries, quartered
  • Vanilla Sugar (as needed)
  • Lemon Juice (as needed)
  • 8 ea. Almond Pain de Gênes
  • Vanilla Ice Cream (as needed)

In a bowl, combine the strawberries, vanilla sugar and lemon juice.  Macerate for 10 minutes.  Place the strawberries into a serving bowl; top with the warm Almond Pain de Gênes and a quenelle of vanilla ice cream.

Cooking Classes at 2941 Restaurant

All of our cooking classes include cooking demonstrations, written recipes, dinner with fine wine and a 2941 French baguette to take home. A highly entertaining evening for couples, friends or co-workers. From cooking novices to connoisseurs, everyone will enjoy the unique experience.

06/22/08 - BBQ Smoking and Grilling (11:00AM - 1:00PM)

2941 Cooking classes are held on Sundays. Each class is $110 per person all-inclusive. Seating is limited.
