Chef Bertrand Chemel’s Recipe of the Month

Bacon wrapped asparagus
Serves 6

• 18 green asparagus stalks
• 6 slices of smoked bacon
• 1 oz olive oil
• 1 oz butter
• 1 sprig of sage
• 6 eggs

Sauce

• 6 stalks of asparagus
• ¼ cup heavy cream
• ¼ cup half and half
• 2 tbsp water
• 5 sprig of tarragon
• 4 stem of chervil
• Salt and pepper to taste

1. Cut ½ inch of the bottom of the asparagus and cook the asparagus in salted water for about 3 minutes or until tender. Cool down in ice water to preserve the color. Lay the asparagus on the paper towel, cut 3 inches from the top of the asparagus, reserve 6 bottoms of the asparagus for the sauce.
2. Wrap three asparagus stalks in one slice of bacon.  In a medium pan over medium high heat add the olive oil and pan sear the asparagus until it becomes a light brown color.  Add the butter and sage, and lightly baste for about 1 minute.
3. In a saucepan, bring the water to 156 f.  Add the eggs for 20 minutes, then reserve at room temperature.
4. Blanche the tarragon and chervil in salted water until tender. Add to the cream and half and half, bring to a simmer.
5. Add the six reserved bottom asparagus, blanched herbs, and cream to a blender until smooth.
6. Season with salt and pepper to taste, pass through a chinois.
7. Plating: On a large plate, place the cooked asparagus in the center, gently crack one egg next to the asparagus, and pour the warm sauce over the egg.

2941 Cooking classes are held on Sundays from 3:00pm to 5:00pm. Each class is $110 per person all-inclusive. Seating is limited.
