Congratulations to our Wine Director / Sommelier, Kathryn Morgan for being nominated in the category of Wine and Beverage Program of the Year and to David Voorhees for being nominated for Restaurant Employee of the Year.

 

In addition to the many award categories voted on by industry experts, the public will be able to choose the winners for Hottest Restaurant Bar Scene of the Year, Neighborhood Gathering Place of the Year, Restaurant Power Spot of the Year, and Favorite Restaurant of the Year by casting a vote through a special RAMMY Awards ballot that will be featured in a supplement in The Washington Post Magazine on Sunday, May 20th, as well as online at www.ramw.org.


Chef Krinn’s Recipe of the Month

Herb-Crusted Leg of Lamb – Serves 6-8

This recipe is great to serve for dinner or brunch in
late Spring.  Serve with fresh green beans, steamed broccoli or sautéed potatoes.

  • 8 Tablespoons fresh bread crumbs
  • 8 Tablespoons unsalted butter, softened
  • 3 Tablespoons extra-virgin olive oil
  • 7 garlic cloves, minced
  • 6 Tablespoons flat leaf parsley, chopped
  • 2 Tablespoons thyme leaves, chopped
  • 3 Tablespoons chives, minced
  • 2 Tablespoons rosemary, chopped
  • ½ lemon, juiced and zested
  • 1/3 cup Dijon or whole grain mustard
  • Salt and black pepper, to taste
  • 6-8 lb. leg of lamb, bone-in, trimmed
  1. Preheat oven to 325 degrees and allow lamb to sit out for 30 minutes to come to room temperature.
  2. Mix the bread crumbs, butter, garlic, herbs, mustard and olive oil in a bowl with the lemon juice and zest until smooth.
  3. Season the lamb with salt and pepper, rub the herb mixture on the underside of the lamb and place in a roasting pan, preferably with a rack, fat side up, then rub the rest of the mixture on the top or fat side of the lamb.
  4. Cook the lamb at 325 degrees for approximately 2 hours and 15 minutes or until a thermometer inserted in the leg registers 140-145 degrees.
  5. Once cooked and golden brown remove to cutting board and allow to rest for 20 minutes to let the juices back into the meat. Carve and serve.

This month’s featured 2941 menu item is:

Grilled Prime New York Steak

wild mushrooms, pearl onions, apple wood smoked bacon
and truffle potato purée

Kathy Says:

A great grilled steak makes the perfect partner for any number of big red wines.  Big red wines have big tannins - tannins that may be aggressive and mouth-drying without food, but melt in the presence of fat and protein.  Cabernet Sauvignon is a very popular choice – and for good reason.  Its bold personality is a natural with red meat, and the bitterness imparted by the grill compliments Cabernet’s bitter tannins.  Syrah also makes a fantastic match, especially with this particular preparation.  Syrah is as bold a wine as Cabernet, and its decidedly smoky flavors really shine when paired with bacon and grilled meat.
