This year Easter Sunday at 2941 Restaurant will be a chic, family friendly occasion including a traditional Easter Buffet, egg hunts, and appearances by the Easter Bunny. 

This Event is priced at $75 per person for dinner or $20 for kids under 12. Beverages, tax, tip and gratuity are not included.

The Easter Buffet Menu will be available from Noon - 9:00 pm on Easter Sunday, April 8th, 2007

Chef Krinn’s Recipe of the Month

Spring Asparagus Soup with Morels

Serves 4

3 pounds asparagus, cut into ½ inch pieces
(reserve 18 tips for garnish)
2 tablespoons extra-virgin olive oil

1 tablespoon unsalted butter

1 medium sized white onion, thinly sliced

4 cups chicken or vegetable stock

½ lemon zested and juiced

¼ pound morel mushrooms
(shiitake if morels cannot be found)

salt and white pepper, to taste

  1. Bring a large stockpot with ¼ cup salt to a boil and add the asparagus. Meanwhile get a large bowl of ice water to stop the asparagus from cooking too much. Cook the asparagus for approximately three minutes, remove and shock in the ice water.
  2. Drain the asparagus and set aside the 18 tips for garnish.
  3. Over medium heat, add the olive oil and butter in medium sized pan and add the onion and sweat over medium heat for 10 minutes, making sure not to color the onions. Add salt and white pepper to taste.
  4. Add the stock and lemon juice and zest and simmer for 7 minutes. Add the asparagus spears and simmer 5 minutes more.
  5. Blend the mixture in a blender, in several batches, and puree until smooth. Be careful blending as the soup mixture will be hot.
  6. Return to the pan when fully blended, season with salt and pepper and bring to a simmer.
  7. Sauté the mushrooms over medium heat for 3 minutes, season with salt and pepper, then add the asparagus spears and sauté 2 minutes more.
  8. Ladle the soup into bowls and garnish with the morel-asparagus mixture and serve.

Note-The combination of bright green, fresh asparagus and earthy mushrooms are a classical pairing early Spring. This soup can be served either warm or cold. Perfect to serve at a special dinner party.

Duo of Japanese Kobe Beef Tartare and
Seared Yellow Fin Tuna Loin

porcini mushrooms, Banyuls reduction and
Perigord black truffle vinaigrette.

 

Kathy Says:

This pairing is actually much easier than it seems.  True, the combination of fish and red meat presents obvious pairing problems, but those difficulties typically emerge as a result of various cooking techniques.  In this case, flavors that would be transformed and intensified by braising, roasting, grilling or smoking, remain pure and delicate – limiting their potential suitors to delicate wines with pure fruit flavors. 

Light, bright reds like Burgundy and Beaujolais pair nicely with the beef tartare, but fail to provide an exciting match for the seared Tuna.  Razor sharp Riesling is always a sure bet with delicate flavors, and comes in a close second as a complement for this duo.  Rosé Champagne proves to be the perfect partner for both sides of this plate.  Its red fruit flavors pair beautifully with the red meat and mushrooms, and its bright acidity shines a spotlight on the freshness of the tuna.

Many consider Cristal to be the archetypal rosé Champagne.  It is fresh, vibrant and spicy - a blend of Pinot Noir and Chardonnay that is simply loaded with finesse and exotic flavors of berries, nuts and ginger.
