New Arrivals at 2941 Restaurant - White Truffles

December is the peak of the Italian white truffle season at 2941. These unique looking fungi have an intense, delectable taste and an aroma that escapes definition. Truffles have been celebrated by epicures throughout the centuries for their taste, aphrodisiacal, and healing powers, and the white truffle season doesn’t last long. In celebration of these magnificent mushrooms, we are pleased to present several new truffle dishes on our menu. Come for lunch or dinner and try our delectable White Truffle Risotto, White Truffle Love Letters, or White Truffle Pizza. 

Luckily for truffle lovers, black truffle season is just beginning and our first black truffle order has already shipped from France.

Black Sea BassChef Krinn’s Recipe of the Month

Papillote of Black Sea Bass
Serves 4 Main Courses

Ingredients:

  • 2 whole Black Sea Bass (2 pounds each) scaled and gutted (Four, eight ounce filets if whole fish is not available)
  • 1 cup Chinese Long Squash, cut julienne
  • 1 ½ oz Peeled Ginger, cut julienne
  • 12 slices Lotus Root-1/16 inch thick
  • 8 slices Lime, 1/8 inch each
  • 1 oz. Cilantro Leaves
  • 2 oz. Butter cold, in ¼ inch cubes
  • 2 oz. Butter softened in microwave
  • ¾ cup Dry White Vermouth (substitute white wine if necessary)
  • Salt, pepper and cayenne pepper to taste
  • ½ cup Fennel, shaved thin

Special Equipment:  
4 sheets of aluminum foil 12x12
Pastry brush

Procedure:
Heat the oven to 375 degrees

  • Using a pastry brush, cover dull side of aluminum foil with the some softened butter
  • Brush the skin side of fish portions with remainder of softened butter
  • Season fish with salt, pepper and a pinch of cayenne
  • Scatter ginger over each fish portion
  • Place cilantro leaves on top of salt and pepper and cayenne
  • Layer the lotus and fennel on top of the fish
  • Place 2 slices of lime on top of each fish portion
  • Place 1 oz. butter and 1 oz. dried vermouth on top of the fish
  • Take one corner and fold onto opposite corner.  Pinch all open edges to seal paupillote and place in oven. 
  • Heat on medium heat a sauté pan (10 inch), place ½ tsp. oil in the pan.  When the oil begins to smoke, place the foiled package, seam side up.  When this starts to puff up, like a balloon, place in the oven for 8 minutes at 375 degrees
  • Remove from the oven and place the papillote’s on serving plates.
  • Serve immediately and cut papillote open with scissors at the table. 
  • Have guests remove lime slices, eat everything else

Our Sommelier Kathy Morgan serves up this special column for our wine connoisseurs: “Wine Splurges and Steals.” Each month Kathy matches a splurge and a steal selection from our extensive wine list that perfectly pairs with one of Chef Krinn’s tempting seasonal menu items.

This month’s featured 2941 menu item is:
Tuna Poke and Mishima Style Beef Carpaccio
young ginger soy vinaigrette, frisee and Belgian endive

Kathy Says:
Pairing one wine with disparate proteins is always tricky.  In most cases, a wine that can match the richness of beef, will overpower the delicate flavors of uncooked tuna.  If a wine is delicate enough to compliment the tuna, it will typically be lost behind the powerful meatiness of the Carpaccio.  Adding vinaigrette to the plate doubles your trouble.  Luckily, all of these problems can be solved by German Riesling.

German winemakers usually choose to leave some sweetness in their Rieslings to balance the high acids inevitably produced by the frosty Northern climate.  This balance creates a sweet-tangy flavor profile that not only mirrors the ginger soy vinaigrette; it is the core of this varietal’s ability to pair with rich flavors as well as subtle ones.  When used correctly, sugar enhances the flavor of wine the same way salt enhances the flavor of food.  So, although their framework is famously light and graceful, German Rieslings have enough concentration to match many rich and meaty dishes.

Riesling Kabinett

Kathy’s Steal:

Riesling Kabinett - Josef Spreitzer, Oestricher Lenchen, Rheingau,
Germany 2005

  • This wine is from the Lenchen vineyard, located in the village of Oestrich.
  • The word “Kabinett” refers to the ripeness of the grapes at harvest.  Kabinett is the lowest ripeness level, resulting in a light, racy wine with very little sweetness.

Since brothers Andreas and Bernd took over the family property in1997, this Estate has become a rising star, known for its modern ideas on quality winemaking.  The Oestricher Lenchen Kabinett quietly explodes with nectarine, yellow apple and wintergreen flavors, and is made in an off-dry style, with just enough perceptible sweetness to balance its brisk acidity. 

 
Riesling Spätlese

Kathy’s Splurge:

Riesling Spätlese [pronounced: SHPAYT-lay-zuh] – Robert Weil, Kiedricher Gräfenberg, Rheingau, Germany 2004
$120.00 per bottle

  • This wine is from the Gräfenberg vineyard, located in the village of Kiedrich.
  • The word “Spätlese” refers to the ripeness of the grapes at harvest.  Spätlese is the second lowest ripeness level, resulting in a richer, more serious wine with some sweetness.

This is the superstar estate of the Rheingau region.  Yields are kept obsessively low and enormous care is taken in the vineyards.  According to Wilhelm Weil, at the end of an eight hour day, each picker returns with the equivalent of four and a half bottles of wine.  This Spätlese has sweetness, but its richness is beautifully offset by mouthwatering acidity and a firm platform of minerality. It is graceful and nervy; the tangy apricot, citrus and smoky pineapple flavors melt in the mouth.
