Chef Krinn’s Recipe of the Month

Broiled Miso Steaks

24 ounces tenderloin or strip steak, portioned into 6 or 8 ounce steaks

Marinade ingredients:
2 tablespoons Dijon mustard
4 ounces ginger juice
(grate ginger and squeeze out the juice)
8 ounces light soy sauce
1 teaspoon light miso
½ teaspoon chopped garlic

  1. Whisk all the marinade ingredients in a bowl and rub liberally onto the steaks (reserve 3 oz of the marinade for the sauce)
  2. Marinate the steaks (wrapped in plastic on a plate) for up to six hours in the fridge
  3. Wipe the marinade completely off of the steaks and broil (or grill) to desired temperature
  4. Heat the reserved marinade, whisk in 2 tablespoons extra virgin olive oil, and brush on the steaks just before serving

Our Sommelier Kathy Morgan serves up this special column for our wine connoisseurs: "Wine Splurges and Steals.” Each month Kathy matches a splurge and a steal selection from our extensive wine list that perfectly pairs with one of Chef Krinn’s tempting seasonal menu items.

This month’s featured 2941 menu item is:
Slowly Braised Prime Beef Short Rib
Celery root potato purée, caramelized root vegetables and syrah reduction

Kathy Says:
Braised meats are like a blank canvas for wine.  The melt-in-your-mouth quality of this short rib will flatter any wine with sufficient intensity to counter the richness of the preparation.  Both of these wines exhibit a great depth of flavor and a mellow texture that echoes the tenderness of the meat.

Kathy’s Steal:
Crozes-Hermitage  -  J. Vidal-Fleury, Rhône Valley, France 2004                 
$12.00 per glass / $45 per bottle

Vidal-Fleury has been a well known producer in the Rhône Valley since 1787.  They make Syrah in a classic style that expresses textbook Rhône flavors of smoked meat, roasted herbs, chocolate, blueberries and blackberries.  This pairing mirrors the earthiness of the celery root purée, and emphasizes the meaty richness of the short rib.

 

Kathy’s Splurge:
Saint-Estephe  -  Château Cos D’Estournel, Bordeaux, France 1990                        $500 per bottle

The pure flavors and subtle undertones of this dish create the perfect stage for a wine with outstanding concentration and complexity.  The 1990 Cos D’Estournel is an amazing wine.  On the palate, it is dense and muscular, with a succulent core of blackcurrants, fig, graphite and dried herbs -  a remarkable combination of power and finesse.
